Udon is a traditionally crafted noodle made simply from hard red winter and spring wheat flour and fine sea salt. The most popular noodle in Japan, consistently rated 'ichi-ban' or number one. TO PREPARE: Add to boiling water. Simmer uncovered, for 8 to 10 minutes. Be careful not to overcook. Drain and rinse with cold water. Serve hot or cold.
